Indigo’s new autumn menus are a testament to the beauty of seasonal ingredients, always emphasising sustainability and quality. Head Chef Dominic Teague works with brilliant local suppliers ensuring that each dish tastes exceptional but also celebrates British produce.
Starters to savour
Nothing screams Autumn quite like wild mushrooms. Dominic’s wild mushroom velouté is served with thyme and croutons, the perfect opening to a warming three-course dinner. For a plant-based alternative, opt for the caramelised onion tart with sea purslane and preserved cherries.
The main event
You will find some old favourites on the menu, such as our day boat fish and chips and 28-day dry aged Irish rib-eye, but if you fancy fully embracing the season we have a few treats in store. Our Highland Grouse paired with beetroot and bitter chocolate is a match made in heaven – earthy, gamey and indulgent.
Our vegan guests can delight in our salt baked celeriac, served with pickled walnut, roasted apple, and wood sorrel, or the potato and truffle terrine served with salsify, spinach and port reduction. Divine!
Sweet conclusions
We all have a second stomach for dessert, right? Karolyn’s Brûlée is back with an autumnal twist of black cherries and sour cherry sorbet. Or our Cornish chocolate cheesecake served with poached pear and caramel popcorn ice cream is the perfect sweet finisher.
